Introducing Thyme Honey: A Distinctive South Island Flavour
There’s a new honey in the Mountain Gold collection, and a new story beginning with it.
Introducing our Thyme Honey, a pure New Zealand honey sourced from the beautiful South Island. With its delicate floral aroma, smooth texture and subtle herbal and spicy notes, it offers a distinctive flavour for anyone who loves exploring the variety of New Zealand honey.
It’s also the first release in a new Mountain Gold range celebrating honeys made from non-native flowering plants growing here in New Zealand. Each honey in this collection will feature a New Zealand bird. For Thyme Honey, we’re beginning with the kea.
A new direction, with New Zealand at its heart
New Zealand’s honey story includes a wonderful diversity of floral sources. Alongside our native honeys, this new range makes room for something different: distinctive honeys from introduced plants that flourish in our landscapes.
Thyme Honey is our first expression of that idea. Bees gather nectar from thyme blossoms in the South Island, creating a honey that reflects its floral source and the place where it is produced.
The plant may be non-native, but the honey is 100% New Zealand.
Meet our first featured bird: the kea
Every honey in our new range will feature a New Zealand bird, giving each release its own identity while connecting the collection through a shared sense of place.
The kea is the featured bird for Thyme Honey. It marks the beginning of a collection that brings together distinctive honey flavours and the birds that help make New Zealand so special.
A flavour worth discovering
Thyme flourishes in warm, dry conditions, producing delicate flowers that attract bees with their nectar.
The resulting honey has a light colour and smooth texture, with a delicate floral aroma. Gentle sweetness is balanced by subtle herbal and spicy notes, giving it a character all its own.
If you enjoy tasting different honeys, Thyme Honey is a lovely opportunity to discover how much variety a floral source can bring to the spoon.
From breakfast to the cheeseboard
There’s no need to save this honey for a special occasion. Try it drizzled over warm toast, spooned onto natural yoghurt or stirred through porridge.
For an easy afternoon treat, serve it alongside cheese and crackers. Its gentle sweetness and herbal notes also make it an interesting addition to baking, cooking or a favourite cup of tea.
Start with a small spoonful on its own, then discover your favourite pairing.
The first of a distinctive collection
Our Thyme Honey is the beginning of a new chapter for Mountain Gold: distinctive New Zealand honeys from non-native floral sources, each featuring a New Zealand bird.
We’re delighted to begin with the South Island, thyme blossoms and the kea.
