Behind the Hives: How Mountain Gold Manuka Honey Is Sourced from Mount Bruce, New Zealand
Every jar of Mountain Gold Manuka honey begins in the same place: the hills and valleys surrounding Mount Bruce in the Wairarapa region of New Zealand's North Island.
This is not a story about factories or mass production. It's a story about place, patience, and the extraordinary natural environment that makes our honey unlike anything else in the world.
Why Mount Bruce?
Mount Bruce sits in the Tararua foothills of the Wairarapa — a region of rolling farmland, native bush remnants, and clean, unpolluted air. It's home to the Pūkaha Mount Bruce National Wildlife Centre, one of New Zealand's most important sanctuaries for endangered native species, and it sits within a landscape that has been carefully protected from industrial development.
For Manuka honey production, this matters enormously. Manuka (Leptospermum scoparium) thrives in the marginal, scrubby land at the edges of native bush — exactly the kind of terrain found throughout the Mount Bruce area. The plants here grow in their natural habitat, undisturbed, producing nectar with the high leptosperin and MGO levels that define premium UMF-certified honey.
The remoteness of the region also means our hives are far from agricultural chemicals, urban pollution, and the pressures that affect honey quality in more intensively farmed areas.
The Manuka Flowering Season
Manuka flowers for just four to six weeks each year, typically between November and January in the Wairarapa. The timing varies with altitude and aspect — south-facing slopes flower later than north-facing ones, and higher elevations can extend the season by a week or two.
During this window, our bees work intensively, visiting thousands of Manuka flowers each day to collect nectar. The honey is produced and capped in the hive, where it undergoes the natural conversion of DHA (dihydroxyacetone) into MGO (methylglyoxal) — the compound responsible for Manuka honey's unique antibacterial properties.
This conversion continues slowly after harvest, which is why freshly extracted Manuka honey is tested for DHA as well as MGO — a key part of the UMF™ certification process.
Harvesting with Care
Our honey is extracted using traditional methods that prioritise quality over volume. Supers (the boxes where bees store honey) are removed carefully to minimise stress to the hive, and extraction takes place in a controlled environment to preserve the honey's natural properties.
We don't blend our honey with lower-grade batches or add anything to it. What goes into the jar is exactly what came out of the hive — raw, unfiltered Manuka honey from Mount Bruce.
Independent UMF™ Certification
Every batch of Mountain Gold Manuka honey is independently tested and certified by the UMF Honey Association (UMFHA) before it reaches you. This means a third-party laboratory verifies the levels of leptosperin, DHA, and MGO in every batch — confirming both the authenticity and the potency of the honey.
