Discover the deep, malty richness of Mountain Gold Beech Honeydew, a unique and highly prized native New Zealand honey produced by bees from the secretions of scale insects on native beech trees. Unlike floral honeys, this liquid honey is naturally low in glucose and fructose and high in complex oligosaccharides such as maltose, erlose, and melezitose, giving it a smooth texture that rarely crystallises.
Collected from the pristine beech forests of New Zealand’s South Island, Beech Honeydew comes from two native beech species — Black Beech (Nothofagus solandri) and Red Beech (Nothofagus fusca) — and the honeydew-producing scale insects Ultracoelostoma assimile and U. brittini. The enzymatic action of honeydew in the insect gut produces a naturally rich, dark red-brown honey with a distinctive malty flavour, ideal for drizzling on the table, enhancing roasts, or enriching barbecues.
Beech Honeydew is also higher in oligosaccharides than most floral honeys, which act as a natural prebiotic, promoting beneficial gut bacteria. This unique composition may support digestive health, particularly following antibiotic use.
