‘Honey dew’, often also referred to as ‘Forest Honey’ is honey produced from honeybees collecting nectar exuded from a scale insect.
Collected from the Beech forests of New Zealands South Island. Two species of Beech tree (Black Beech (Nothofagus solandri) and Red Beech (N. fusca)), are home to two species of honeydew insects, Ultracoelostoma assimile and U. brittini.
The enzymatic action of the honeydew in the gut of the scale insect may be benefical. Honeydew is higher in Oligosaccharides (complex sugars) than most all flower source honeys. Oligosaccharides are considered a probiotic in that it aids and promotes beneficial bacteria in the gut. Thus Beech Honeydew may be helpful after antibiotic use.
The honeydew produced from the native New Zealand Beech tree is a wonderful liquid honey ideal for the table as it rarely crystalises (low in glucose and fructose and high in more complex Oligosaccharides sugars such as maltose, erlose, and melezitose). It is rich and very dark red/brown in colour with a malty taste. Will add a richness to barbecues and roasts.

The product was not Honeydew, and crystallised, which did not go back to liquid at room temp.
My communication was responded with an answer that suggested I didn't know the difference.
with no responsibility for incorrect labeling.
I was however, offered a replacement, and the honey was beautiful.
The currrent batch of honeydew has been labratory tested and meets the standard for Monofloral Beech Honeydew. Whilst Honeydew rarely chrystalises it still can. Crystalisation is a natural process that occurs for a number of reasons such as stored temperature and the sugar composition of the honey. We are now revisiting the way we store our packed products, Currently we store all our honey types in a cold room (not refrigerated but still cold). This does encourage a liquid honey to crystalise. Whilst this is the best way to store our other amazing honey and to preserve freshness, it is also a way to encourage a liquid honey to crystalise. We now store our liquid honeydew at room temperature which will significanlty reduce the chance of it forming crystals.
We most definatley did not tell a customer that they didn't know the difference between honey types.
The product is correctly labelled as Beech Honeydew.
Already crystalised honey will not return to liquid at room temperature. An easy way to do this is to gently warm in the microwave.
